Ginger in the human diet

Ginger (Zingiber officinale) is known as a spice. But is also known as a medicine for more than 3000 years. Ginger is grown and used for human consumption and treatment worldwide. Originally from Asia, mostly grown and used in India, and among the better types include ginger from Jamaica, China and Australia.

For many years ginger has been used as culinary ingredient in traditional Chinese medicine. Research found that ginger has many concentrated medical substances – vitamins and minerals and most of them are in the root:

  • proteins
  • fibre
  • vegetable fats
  • plant hormones
  • gingerol
  • zingerone
  • enzymes
  • essential oils

What is particularly interesting is that ginger in conjunction with other medicinal plants and drugs significantly increases its beneficial effects.

Applications in dietary

Ginger root is used as condiment to cakes, tea, beer or liquor. As a spice, ginger is specifically used in Indian cooking for making sauces, vegetable dishes, rice dishes, game dishes and various desserts.
